Born and raised in the beautiful city of Florence, Chef Lapo Magni learned the secrets of Tuscan-Italian cooking at his mother’s knee. Organic, sustainable and ethical are the pillars of his philosophy. ‘This is the only food we should eat,’ he says, for its taste and for the planet.

Lapo won the Italian version of MasterChef in 2013 and plied his trade at top restaurants in Italy and South Africa. But he became disillusioned with the amount of waste in commercial kitchens. A stint as a private chef allowed him to engage with his guests, and he learned that knowledge about sustainable cuisine and ethical sourcing was best imparted around the dinner table, in an immersive food experience, as opposed to simply sitting and eating.

A truly immersive food experience is a thing of beauty. In a time of increasing social detachment it is a way to reconnect with the land, heritage, and the people around us. It is a diverse and dynamic channel for sharing stories, forging relationships and building communities.

Enter Eatsplorer, a fresh online marketplace that puts at a diner’s fingertips a collection of the most authentic food and drinks experiences the nation has to o er. The passion project of Liezel Norval-Kruger and Kara Furter, Eatsplorer was launched in December 2016.

One such experience can be had around the table of Lapo’s Kitchen in Observatory, Cape Town. He opens his home to small groups of diners who come to enjoy beautiful meals that place the spotlight on fresh, seasonal ingredients sourced from passionate small-scale producers.

These include Harvest of Hope, a local farming initiative that provides families in disadvantaged communities with the tools to grow and sell organic vegetables; Gary Goldman, a mushroom forager who traverses Cape Town’s forests in search of edible fungi; and Ryan Boon, an ethical butcher in Paarl.

My love for cooking comes from the element of spirituality behind sitting down at the table. It’s about more than feeding your body; it’s about feeding your soul,’ says Lapo. ‘I feel privileged to be the zero- waste middleman between these passionate suppliers and ethically minded consumers.’
