Grilled Peaches with Amaretto and Crumbled Amaretto Cookies

Grilled Peaches with Amaretto and Crumbled Amaretto Cookies

Ingredients

6 peaches, fresh or canned
100ml amaretto
6 amaretto cookies
100g mascarpone
150g curd cheese
2 tbsp icing sugar

Instructions

Peel the fresh peaches, half and remove the pip. If you are using canned peaches, strain them first, then pat them dry. Marinate the fruit for 5 for 10 minutes in the amaretto.

Crumble the amaretto cookies.

Combine the mascarpone and curd cheese and mix in the icing sugar. Keep cool until time to use.

Heat the grill and grease the butter. Grill the peaches (4 to 5 peaches for canned peaches and 7 to 10 minutes for fresh peaches). Cover and set aside. Serve the peaches with the mascarpone and sprinkle the crumbled amaretto cookies over the top. Serve immediately.
