Wake up your palate with vital flavours and colours this summer – try this salad recipe for a sweet and sassy plate of mandarin, prawns, camembert, marigolds and grappa.
Orange Platter: Sweet and Sassy
200 g cooked prawns
2 mandarins, peeled and segmented
2 baby lettuces, washed
1 ripe guava, peeled and sliced
100 g baby carrots, sliced
100 g smoked salmon
250 g camembert
50 g sorrel leaves
1 small marigold flower, petals only
125 ml grappa
Place the prawns and mandarin segments in a bowl and drizzle with juice of half a lemon.
Place the remaining ingredients on a large platter.
Drizzle cheese and lettuce with grappa.
Serve with crusty French bread.
